It’s amazing how much flavor remains when you simplify a recipe and actually make it healthier. When it comes to potato-based foods, most people tend to opt for sweet potato fries or even stuffed potato skins. But when you bring it down to just the potato, you can really cut down on sodium and fat.

Enter: this super simple, foolproof sweet potato wedge recipe that’s as easy as cutting up a few slices and tossing them in the oven. 

4 medium-sized sweet potatoes
1 cup low-fat sour cream
3 Tbsp olive oil
Salt, to taste
How to make it 

Peel the 4 medium sweet potatoes.

Cut lengthwise into chunks about ½-inch thick .

Place on a nonstick baking sheet and lightly coat with olive oil. 

Bake at 400˚ F for 15-20 minutes, or until tender. 

Season with salt, if desired, and top with low-fat sour cream.
